Cheesy Herb Popovers

2 cups milk
4 eggs
2 Tbls. melted butter
2 cups flour
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. thyme
1/4 tsp. oregano
2/3 cup shredded cheddar
In a large mixing bowl, add the milk, eggs, melted butter, flour, salt, pepper, thyme and oregano. Mix together well and then add the cheese. Stir to incorporate. Loosely cover the bowl and let it sit for 1 hour in the refrigerator. After 1 hour, preheat oven to 425. Grease a muffin tin. {I like to use melted butter for this particular recipe, but you can use baking spray as well.} Divide the batter among 12 muffin cups. Bake in the oven for 30 minutes. {Do NOT open the door while cooking.} These can be served warm or cold.
