Cheesy Meatloaf Stuffed Green Peppers

This is a quick main dish and vegetable in one-with a delicious sauce.

1 egg
3/4c milk
1/2c quick cooking oats
1c shredded mozzarella cheese
1t salt
1/2t black pepper
1/2 diced onion
1lb ground beef
3 green bell peppers
1/2c packed brown sugar
2/3c ketchup
1 1/2t yellow mustard
-Preheat oven to 350. -Wash green peppers and slice horizontally into 4 rings each. Remove ribs and seeds and discsrd. Place rings on a rimmed baking sheet that has been coated lightly with cooking spray and set aside. -Beat egg and milk together. Add oats, cheese, onion,salt and black pepper. -Add ground beef and mix well. Divide into twelve equal portions and fill each pepper ring. -Combine sugar, ketchup and mustard. Spoon mixture over each stuffed pepper ring. My husband is not a fan of ketchup so I leave the sauce off of his-he does not know what he is missing! -Bake for 35-40 minutes.

3 slices thick cut bacon
1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
1/2 t apple cider vinegar
1/2 t Worcestershire sauce
2 c fresh or frozen okra
salt and pepper ( to taste )
