Cheesy Rice & Spam

This cheesy dish great for a lunch or dinner, easy to make and something the whole family will enjoy

1 can of spam
1 ½ cups of white rice (unprepared)
1 teaspoon of butter
½ cup condensed cheddar cheese (unprepared)
Salt and pepper to taste
½ cup water
Step 1: put a medium sauce pan over high heat to boil. Step 2: add condensed cheese and water to a small sauce pan cook over medium heat until cheese is starting to bubble and take off the heat. Step 3: when the water is up to a rolling boil, add the rice cook for 15-18 minutes or until rice is al dente. Next place a medium frying pan over med-high heat, when it starts to smoke add the spam cook until both sides are golden brown. Step 4: when the rice is cooked strain it and put it back in to the pan, add the cheese, butter salt and pepper mix well until the rice is evenly coated. Serve and enjoy

3 slices thick cut bacon
1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
1/2 t apple cider vinegar
1/2 t Worcestershire sauce
2 c fresh or frozen okra
salt and pepper ( to taste )
