Cheesy Rotini

Thought I\'d try a \"healthier\" take on regular old mac and cheese, and came up with this creamy, three-cheese, spinach main course dish. I\\\'m not sure its even a tad healthier, but at least you\\\'ll get your greens.

450g rotini

1 tbsp olive oil

1 small onion, minced

1 tsp garlic, minced

2 1/2 cups mix of cheddar and swiss cheese, shredded

1/2 cup mozzarella, shredded

1/2 cup plain Greek yogurt

1/2 cup hot water

1/2 cup milk

8oz fresh spinach, chopped

Lots of fresh ground pepper
