A light, moist cake topped with a full jar of Amarena cherries and a sweet, crunchy topping by Sugar Salt Magic

100g unsalted butter, softened
100g caster sugar
1 egg
1 tsp vanilla extract
125g self raising flour
2 Tbsp milk**
Zest of ½ lemon
1 jar of amarena cherries drained


Crumble topping
1/3 cup plain flour
½ cup almond meal
2 Tbsp caster sugar**
50g chilled butter, chopped
1 egg yolk, lightly beaten
Cream, ice cream or custard to serve
