Sweet and chewy mochi recipe

1 pound mochiko (16 oz. box of rice flour)
1 1/2 cups sugar (if you like things sweet, add 2 cups)
1 teaspoon baking powder
1 can coconut milk ( 14 oz.)
1 3/4 cups water
1 teaspoon vanilla (optional)
red and green food coloring (optional if making one color mochi)
potato starch for dusting
