Chicken and Hominy Stew

This family favorite works well with leftover turkey too! It’s been a hit at our “Soup-Days” at work.

1 tsp. garlic, minced
1 small onion, chopped
½ c. salsa verde
1 med. jalapeno chile pepper, chopped fine
1 can (15 oz.) diced tomatoes, with juice
1 can (15 oz.) hominy, drained
1 can (15 oz.) pinto beans, drained
1 jar (12 oz.) chicken gravy
8 oz. chicken, cooked and diced
¼ tsp. ground cumin
½ tsp dried oregano, crumbled
¼ tsp. black pepper
¼ tsp. salt
1 c. water
1 tsp. chicken bouillon
Place all ingredients in crock-pot. Cook on low 8-10 hours, or on high 4-5 hours. To thicken, if desired, remove lid and cook on high for an additional 30-60 minutes.
