Chicken and Veggie Stir Fry

vegetable or coconut oil
1 bag frozen Asian vegetables
Quorn soy chickn cutlets, cubed (or a couple Chicken breasts cubed)
3 chopped green onions
1 Tablespoon ground ginger (or if you have fresh, minced)
1 Tablespoon minced garlic
2/3 cup vegetable stock
2 Tablespoons soy sauce
4 Tablespoons sugar
red pepper to taste
1 Tablespoon white vinegar
1 Tablespoon cornstarch
1 small can sliced water chestnuts, drained
