Chicken & Andouille Gumbo

A delicious, flavorful gumbo to warm your day!

1 Tablespoon Emeril's essence or Cajun seasoning, divided
1/2 teaspoon salt, divided
1 1/2 pounds boneless chicken thighs (if using bone-in, remove the skin first)
1/4 cup plus 1 Tablespoon oil (use olive or peanut)
1/4 cup all-purpose flour
1 small onion, diced
3/4 cup bell peppers, diced (I used a mix of green, red, and orange)
1 stalk celery, diced
2 garlic cloves, minced
2 cups water
1 cup chicken stock
3/4 pound fully-cooked Andouille sausage, sliced
1 Tablespoon Worchestershire sauce
1 bay leaf
