Chicken Baked in Orange Sauce

This is one of my favorite recipes, my mother used to love when I would make this for her. This is great served over rice.

2 1/2 pounds chicken pieces
1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1/3 cup oil
1 can (12 oz.) frozen orange juice concentrate
12 oz. water
1 teaspoon salt
1 tablespoon sugar
3 tablespoons honey
2 tablespoons cornstarch
2 small cans mandarin oranges, drained
I 16 oz. bag of broccoli flowerers
1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1/3 cup oil
1 can (12 oz.) frozen orange juice concentrate
12 oz. water
1 teaspoon salt
1 tablespoon sugar
3 tablespoons honey
2 tablespoons cornstarch
2 small cans mandarin oranges, drained
I 16 oz. bag of broccoli flowerers
Heat oven to 350 degrees. Wash and pat dry chicken. Combine flour, salt and pepper in a gallon zip lock bag. Put in chicken pieces one at a time and coat evenly. Heat oil in a large skillet over medium heat. Brown chicken well on both sides. Remove from pan and place in a casserole or baking dish. Pour off all but 1 tablespoon of oil in skillet. Add the can of orange juice, 12 oz. of water, bring to a boil, stirring to loosen brown bits. Add 1 teaspoon salt, 1 tablespoon sugar, cornstarch and 3 tablespoons honey. Gently stir in one can of the mandarin oranges and pour mixture over the chicken pieces in the casserole. Arrange other can of mandarin oranges around the edge of the casserole. Bake at 350 degrees for 1 hour.
