Chicken Black Bean Enchilada Stuffed Spaghetti Squash

Spaghetti squash boats filled with shredded chicken, black beans, corn, seasonings, cilantro and red enchilada sauce then topped with a heap of melted cheese!

FOR THE ROASTED SPAGHETTI SQUASH
2 small spaghetti squash, cut in half and seeded
1 Tbsp Olive oil
salt and pepper to taste (a use about ¼ tsp per half)
FOR THE CHICKEN ENCHILADA STUFFED SPAGHETTI SQUASH
½ lb chicken, cooked and shredded
1 can enchilada sauce
1 can black beans, drained and rinsed
1 small white onion, diced
1 can corn
1 bunch cilantro, chopped
½ cup cheddar cheese, shredded
½ cup monterey jack cheese, shredded
