I wanted to replicate the Chicken Crepes that I had at the French Coffee Shop in Cuyahoga Falls, OH. My husband and I agree that I came up with a recipe that is very close and very delicious. It's not very diet friendly but it's great for special dinners with special people. The picture is one I got from the internet which looks very much like this recipe with added parsley. I will post a photo next time I make these. I had no idea that I should have photographed them when I made them

Crepes:
2 Large Eggs
1 Cup Milk
2/3 Cup All-purpose Flour
1 1/2 Teaspoons Vegetable Oil
Cheese Sauce:
4 1/4 Tablespoons Butter
1/4 Cup Finely Chopped Onions, I used shallots
4 1/4 Tablespoons All-purpose Flour
1 1/2 Cups Milk, scalded
3/4 Cup Gruyere Cheese, grated
8 Ounces Cooked Chicken, shredded
2 Large Eggs
1 Cup Milk
2/3 Cup All-purpose Flour
1 1/2 Teaspoons Vegetable Oil
Cheese Sauce:
4 1/4 Tablespoons Butter
1/4 Cup Finely Chopped Onions, I used shallots
4 1/4 Tablespoons All-purpose Flour
1 1/2 Cups Milk, scalded
3/4 Cup Gruyere Cheese, grated
8 Ounces Cooked Chicken, shredded
1. Make crepes as early as you want. In a blender combine the ingredients. Process until smooth.
