A crispy chicken cutlet, served on a bed of mixed greens and all drizzled with a lemon garlic dressing

4 boneless chicken breasts, thin
1 C whole wheat breadcrumbs (or regular)
1/2 C flour
1/2 tsp salt
1/4 tsp black pepper, freshly ground
2 eggs, beaten
1/4 C olive oil
6 oz mixed greens (arugula and spinach)
For the Dressing
1/4 C extra virgin olive oil
1 lemon, zest and juice
1 T fresh oregano, minced
2 garlic cloves, minced
1/2 tsp sugar
Salt and pepper to taste.
