A classic chicken dish that presents beautifully but is easy to make.

•9 oz package frozen creamed spinach
•4 boneless chicken breasts
•1 tsp salt
•¼ tsp black pepper
•1 T olive oil
•2 T butter, divided
•2 large shallots, thinly sliced
•4 garlic cloves, minced (only use 2 if you don't like a heavy garlic flavor)
•1 C dry white wine
•1 C heavy cream
•2 T freshly chopped parsley
•2 C white rice, prepared

Who doesn't love having a good Caesar salad! However, having Caesar salad in restaurants is never a healthy choice. As, it is always loaded with excess fats and calories. I have prepared an entirely healthy homemade Caesar salad in a tortilla bowl that rivals that of any restaurant.
