about 1 lb, or 2 medium, boneless skinless chicken breasts
1 tbsp olive oil
2 tbsp butter
1 medium onion, diced
2 stalks celery, diced
2-3 large carrots, peeled and diced
3 tsp minced garlic
3 tbsp flour
1/2 tsp dried thyme
1/4 tsp cayenne
1/2 tsp salt, or to taste
1/2 tsp pepper, or to taste
4 cups chicken broth or stock
1 cup half and half
3 cups fresh baby spinach
