Chicken:
3 lbs. chicken breast
1 can Rotel
1 - 15 oz. can enchilada sauce
3 Tablespoons. lime juice
1/2 cup chopped fresh cilantro
2 teaspoons garlic powder
2 teaspoons chili powder
2 teaspoons cumin

Rice:
1 1/2 cups rice
1 Tablespoon sesame oil
1 Tablespoon salt
1 teaspoon. pepper
1/4 cup lime juice
3/4 cup chopped cilantro
1. Place all chicken ingredients in your slow cooker. Cook on high for about 6 hours. 2. At the end of the cooking time, break the meat up with a wooden spoon. 3. For the rice: Place all ingredients in a rice cooker and cook until done. 4. Serve the chicken of amazing-ness over rice. 5. Enjoy!
