Chicken Parmesan Meatballs

My husband has a dear love for chicken parmesan. He orders it every where we go out. It’s one of those foods that he feels defines how good a restaurant actually is. So when I told him that I had come across a recipe for a giant chicken parm meatball, he was all for it. I didn’t know how exciting it would actually be. But after I made it the first time, he requested it again a week or two later… so it must have been a home run! Adapted from Martha Stewart’s Everyday Food, October 2012 issue

1 3/4 c bread crumbs (I like to make mine fresh)
1/2 c milk
1 lb ground chicken
2 c vegetable oil
3 oz mozzarella (I have used both fresh and shredded, they both work, but it is a bit harder with shredded)
