This is probably one of my most favorite recipes I have in my cooking arsenal. The ingredients are simple and basic, but the combination yields such a tasty, restaurant-quality result. It also comes together quickly from start to finish, making it a great choice for a weeknight meal. Even my two picky toddlers like this Chicken Piccata, so I bet you'll like it, too!

3 boneless, skinless chicken breasts, cut into bite-sized pieces
1/3 cup flour
1 1/4 cups of chicken stock
1/4 cup freshly squeezed lemon juice
2 tbsp. butter
1 tbsp. capers, drained
1/4 fresh parsley, chopped
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder

Mix together flour, salt, and pepper, and dredge diced chicken until evenly coated. In a large measuring cup, mix together chicken broth, lemon juice, capers, and garlic powder. In a large skillet, melt butter over medium, high heat. Once melted, add chicken and broth mixture, and bring to a boil. When the liquid comes to a boil, turn heat down to a gentle simmer, and cover skillet. Cook for 12-13 minutes, stirring occassionally. Serve over rice, pasta, or couscous. Garnish with fresh parsley.
