1 onion, chopped

4 cloves garlic, minced
2 teaspoons dried thyme
2 tablespoons flour, plus more for dusting
1 cup white wine
2 cups chicken stock
2 teaspoons Dijon mustard
2 cups frozen peas and carrots
2 cups cubed or shredded cooked chicken
2 sheets (1 package) frozen puff pastry, thawed
