Chicken Red Curry

A colorful blend of vegetables and spices makes this one-pan curry a family favorite!

1 Tbs. oil for frying
2-3 Tbs. Red Curry Paste (depending on your spice level)
1/4 cup water
1 lb. chicken
1 large carrot, peeled and slivered
1 small head of broccoli, cut into small florets
1 red bell pepper
1/2 cup of bamboo shoots (optional)
1 small onion
3 cloves of garlic
1 can of coconut milk
