Chicken Rolled with Onion Mustard Stuffing

Prior to baking, you can prepare some rice or veggies for these to lay on for a one dish meal. These savory stuffed chicken breasts can also be rolled ahead of time for parties.

2 large Boneless, skinless chicken breasts (cut in half) or 4 whole small to medium breasts
1 cup water
1 chicken bullion cube
1/4 cup red onion (chopped)
1 clove garlic (chopped)
1 heaped tablespoon Colemans Old English Mustard Powder (divided)
1/4 teaspoon thyme
2 cups Pepperidge Farms Herb Stuffing
salt and pepper to taste
1/4 cup parmesan cheese (shredded)
