Chicken Saltimbocca Schnitzel and all the tricks to making the perfect schnitzel.

2 cups vegetable or rice bran oil
2 large chicken breasts
8-10 fresh sage leaves
20 g parmesan finely grated
4 slices prosciutto
2 cups homemade breadcrumbs
1 ½ tablespoons mild paprika (see notes)
1 tablespoon dried oregano (see notes)
2 teaspoons sea salt flakes
1 large egg beaten
1/3 cup plain / all purpose flour
Salt & pepper to taste
1 lemon cut into wedges, to serve
