Chicken Skillet Dinner

Ingredients
2 boneless skinless chicken breasts
1/2 Tbsp olive oil
1 zucchini, sliced and quarted (see below)
1/2 bell pepper, chopped
1/2 onion, chopped
1/4 c. water
1 clove garlic, minced
1 10.75 ounce can condensed tomato soup (or 1 can tomato sauce for Gluten free version)
Salt
Garlic salt
Pepper
1/2 c. shredded cheese (I usually use cheddar)
Rice
The first thing you'll want to do is get the rice cooking. Cook according to package directions. I slice the chicken half through the side to open it up, which gives you 4 thinner pieces. It cooks faster...
