Chicken Spinach and Parmasean Mac and Cheese Casserole

This ecipe was born the night before Thanksgiving when I had nothing in the house that wasn't for the big day. I scoured the fridge and pantry and came up with what looked not so promising but the result was a delicious "sort of homemade" baked mac and cheese dish that was totally satisfying and has now made it into my regular menu option for an easy and I mean easy weeknight meal.

1 package Kraft Homestyle Mac and Cheese (Parmesan cheese flavor)

1 package Perdue Shortcut Chicken

Fresh spinach - 1 Cup or more to your liking

(you could also use frozen, just cook it and drain it well)

1/4 C shredded mozzarella Cheese

These easy shrimp rolls are a delicious lunch or dinner when served alongside coleslaw, potato chips, hush puppies or pickles!

2 T salted butter
1 lb. peeled and deveined cooked shrimp
1 stalk celery
2 green onions
1/3 c mayonnaise
1 t lemon juice
1 t white vinegar
1 T minced fresh dill
