A lightly breaded chicken breast served over garden fresh zucchini with a slow simmered sauce.

1 tablespoon olive oil
½ cup diced onion
1 clove garlic, minced
1 15 ounce can petite diced tomatoes (Red Gold)
1 8 unce can tomato sauce (Red Gold)
1 tablespoon tomato paste
1 tablespoon fresh basil, chopped
1 tablespoon fresh oregano, chopped
¾ tablespoon granulated sugar
2 tablespoons red wine vinegar
¼ - ½ teaspoon red chile flakes
1 tablespoon Worcestershire sauce
1 small jar capers, drained
1 small jar of water, use the capers bottle
4 boneless, skinless chicken breast halves
1/2 cup Wondra flour
Salt and pepper
2 tablespoons olive oil
4 medium zucchini grated
