Chipotle Crockpot Chicken Chili

Curl up by the fire with a hearty bowl of this spicy chipotle chicken chili!

1.25lbs raw chicken cut into cubes sprinkled with chicken seasoning
1 tsp thyme
2 bay leaves
2 chipotle peppers in adobo sauce, minced
1/2 diced onion
1 can (15 ounce can; rinsed and drained) pinto beans
1 can (15 ounce can; rinsed and drained) navy beans
1 can (15 ounces) fire roasted crushed tomatoes
2 cups chicken stock
2 cups of white rice, cooked
2 TBS cornstarch, 2 TBS cold water
1 tsp thyme
2 bay leaves
2 chipotle peppers in adobo sauce, minced
1/2 diced onion
1 can (15 ounce can; rinsed and drained) pinto beans
1 can (15 ounce can; rinsed and drained) navy beans
1 can (15 ounces) fire roasted crushed tomatoes
2 cups chicken stock
2 cups of white rice, cooked
2 TBS cornstarch, 2 TBS cold water
Combine all ingredients except for rice, cornstarch and cold water.
Cover and cook on low for 7-8 hours or high 3.5 to 4 hours.
Remove and throw away bay leaves. Add cooked rice.
