Chipotle Lime Chicken Salad

This is one of my favorite favorite go-to easy healthy recipes. You can also omit the chicken and make it a vegetarian dish or a side. It can be served warm or chilled. It is great chilled on a hot summer evening.

Chipotle Lime Chicken Recipe
2 8.5 ounce microwavable bags of brown rice (I like these because they make the recipe extra simple)
2 cups pico de gallo
1 15 ounce can of black beans, rinsed
juice of 4 limes
2 T olive
2 bunches of chopped fresh cilantro (love this stuff, so I put tons in)
salt and pepper to taste
Dice the chicken Heat the rice Mix the chicken, rice, black beans, pico de gallo and cilantro Pour the lime juice and olive oil on and toss some more Salt and pepper to taste Chill for at least an hour if...
