Chipotle Pepper Chicken

8-10 Chicken Thighs
1 Can of tomato paste (6oz)
1 1/2 Can of tomato puree (29oz)
1 Can of diced tomatoes (14.5oz)
2 Packages of McCormick Chipotle Pepper Seasoning
2 Tablespoons of light brown sugar
2 Tablespoons of pure sugar
1/4 cup if soy sauce
1/2 onion (diced)
1 Celery stalk (diced)
a few parsley stalks (w/ leaves)
1. Cut extra skin and fat off chicken 2. Salt and pepper chicken to taste 3. Sear chicken in skillet with olive oil (skin side first) 2 minutes on each side 4. Combine puree, paste, diced tomatoes, chipotle seasoning, brown sugar, pure sugar, soy sauce, onion, celery and parsley in pot. Bring to boil. Then add chicken 5. Reduce heat, simmer 35 to 45 mins 6. Remove chicken and ENJOY!
