Chocolate Chip Pumpkin Oatmeal Cookies

1 can (15 oz.) pumpkin puree
3 large eggs
3 tsp. vanilla extract
2 1/4 cup whole wheat flour
4 1/2 cup oats (I used quick cooking)
1 cup sugar*
3/4 cup packed light brown sugar*
3/4 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. sea salt
1 1/2 tbsp. ground cinnamon
3/4 tsp. fresh ground nutmeg
1 1/2 cup chopped pecans
1 small bag (12 oz.) semi-sweet chocolate chips

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
