Chocolate Chip Spinach Muffins are a perfect Halloween Goblin breakfast for your little goblins! These muffins may be green but are exploding with chocolate flavor chunks!

1/2 cup unsweetened applesauce
1/3 cup of honey or sugar
1 large egg, beaten
2 tsp. vanilla extract
1 cup packed spinach
2 Tbsp. olive oil
1/2 tsp. salt
1 1/2 cups of spelt flour, gluten free flour mix, gluten free oat flour or all purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
1 cup milk chocolate chips
