Chocolate-covered Peanut Butter Eggs

Almost as tasty as the ever-popular Reese's Peanut Butter Eggs! Chocolate-covered eggs filled with a delicious creamy peanut butter filling.

3 cups powdered sugar
1 1/2 cups creamy or crunchy peanut butter
1/4 cup butter, melted
2-3 Tbsp milk
1 bag milk chocolate chips (12 oz)
1 Tbsp shortening
In a mixing bowl, mix together the powdered sugar, peanut butter, butter, and 2 Tbsp of milk. Beat well until dough is soft and crumbly. Roll the dough out to a 1/2 inch thickness on a flat surface that is lightly covered with powdered sugar. If dough is still too crumbly, add the additional tablespoon of milk. Using an egg-shaped or circle-shaped cookie cutter, cut shapes out of the dough. If using a circle-shape and you want it to look more like an egg, press dough into an egg shape after cutting it out with the circle. Place cut out eggs on a cookie sheet and chill in freezer for an hour. When ready to dip, melt chocolate chips and shortening in the microwave. stirring every 30 seconds until fully melted. Dip each egg with two forks, covering completely with chocolate. Place on wax paper until chocolate has set.
