Chocolate Pound Cake

118

This chocolate pound cake is delicious! The greek yogurt makes it a bit more heavy and dense than if you would use sour cream, but it is still amazing! Topped with a thick, creamy chocolate buttercream frosting...it is amazing!

Cake Batter:
3/4 C Softened butter
1/2 C plain greek yogurt (you can use sour cream as well)
3 eggs
2 TB half and half
1 1/2 C white sugar
1 1/2 C flour
1/4 tsp baking powder
1/4 tsp salt
3/4 C cocoa powder
1 cup milk chocolate chips

Chocolate Buttercream Frosting:
1/2 C softened butter
2 C powdered sugar
1/2 C cocoa powder
2 TB half and half, you can adjust to how thick you want your frosting
Chocolate chips to garnish
In a medium bowl, cream the softened butter and greek yogurt ; add the sugar, half and half and one egg at a time, mixing well after each. In another bowl, mix the flour, cocoa powder, baking soda and salt together. Add half of the dry mixture into the creamed mix. Mix well and add the other half of the dry mix. Fold in the chocolate chips. The batter is very thick! Spoon the mixture into a greased loaf pan (or you can use 4 mini loaf pans). I use coconut oil to grease the pans, it works great! Bake at 325, for approximately 1 hour, or until a toothpick comes out clean. The mini loaf pans took 35-40 minutes. Cool in the pan for 10-15 minutes before removing. Once they are completely cooled, frost those babies! You can garnish with more chocolate chips, or shaved chocolate. Enjoy!
