1 (8.8-ounce) pkg. Biscoff cookies, crushed
5 tablespoons butter, melted
1/2 cup chopped pecans (optional)
4 egg yolks (well beaten)
2 heaping tablespoons flour
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
2 cups milk, divided
1 teaspoon vanilla
pinch salt
3 ounces semi-sweet chocolate, chopped
1 1/2 cups canned pumpkin
1 teaspoon pumpkin pie spice
3 teaspoons unflavored gelatin
6 tablespoons water
1 1/2 cups cold whipping cream
8 ounces cream cheese, softened
1 1/4 cups powdered sugar
sweetened whipped cream and chocolate shavings for garnish
