Chorizo Cassarole

You will not be disappointed by this dish. It has all the favorites. Chorizo, cabbage, potatoes, sour cream and cheese all melded together !!! I was told this was a dish was created by a mother in Mexico whom used it to feed her family when they were really poor. Anyone I have ever served this to has absolutely loved it. My children each pick a dish for Thanksgiving and Christmas each year and each of my five children chose this each year. It has become a tradition !

2- Sticks of Chorizo ( I use el popular)
1- head of cabbage
10 medium potatoes
16.oz large container of sour cream
Mozzarella Chesse ( use as much as you like)
Oil
Salt to taste
Peper to taste
Peel the potatoes and cut in to chunks to fry, fry in oil with salt and pepper. Then slice cabbage into small strips/string slices. In a different pan than the potatoes start cooking the chorizo with the cabbage. Cook until the chorizo and cabbage is done. Once all is done ( the potatoes and the cabbage, chorizo) Mix all together in a large tin pan of choice. Mix in the 16. oz container of sour cream and top with your liking of Mozzarella cheese. Bake at 350 for 45- 1 hour and serve.
