Christmas Leftovers: Hash Brown Casserole, Ham & Eggs

We did not have many left overs this year because we did a Christmas brunch and it was mostly different appetizers, unless you count the gazillion cookies we still have. We did have some ham and hash brown casserole left over, so I decided to make a treat for husband for breakfast. Simple and very satisfying on a morning when the thermometer was reading 23!

1 serving of leftover hash brown casserole per person
about a cup of diced ham per two people being served
one fried egg per person
sliced green onions for garnishing
coarse black pepper
about a cup of diced ham per two people being served

Reheat the hash brown casserole. Dice ham. Fry an egg.
On a plate place the hash brown casserole first, then the diced ham, the green onion and then the fried egg on top. Sprinkle with pepper
Serve immediately.
