A blend of colorful vegetables with grilled chicken in a flavorful cilantro lime dressing.

bell peppers, onions, black beans, avocados, (corn and tomatoes-optional), and grilled chicken.

Add 1 can black beans (drained), 1 can corn (drained), 1 onion (chopped), 1 bell pepper (chopped), 2 bags of edamame beans, 2 grilled chicken breast cubed into a big bowl.
In a blender liquify 1/2 a cilantro bunch, zest from one lime and juice from 7 limes, and about a 1/4 cup of olive oil. (salt and pepper to taste)
Pour dressing onto vegetables and mix
Garnish with cubed avocado chucks that are lightly powdered with salt and pepper.
We like to eat this salad over wheat rice but by itself is great also.
