Citrus Baked Chicken Legs

This chicken dish pops in your mouth with the refreshing bursts of citrus and the herbs balance that out perfectly. I'm not sure what else to say but go make it!

•1/4 C olive oil
•4 cloves garlic, minced
•2 T sugar
•2 lemons, juice one and slice one
•2 oranges, juice one and slice one
•1 T Italian seasoning
•1/2 tsp paprika
•1 tsp onion powder
•pinch (about 1/4 tsp) red pepper flakes
•1/2 tsp salt (I used coarse sea salt)
•1/4 tsp black pepper
•6-10 pcs bone in chicken, I used all legs (the drumstick)
•1 small red onion, sliced
•3 sprigs thyme leaves removed from their stems
•2 sprigs rosemary, chopped

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
