Classic Beef Bourguignon

A delicious version of a classic dish that's fancy enough for entertaining and homey enough for a family dinner!

4 slices bacon, chopped
1 tbsp olive oil
2 1/2 lbs beef stew meat
1/4 cup + 2 tbsp flour, divided
1/2 tsp salt
1/2 tsp pepper
2 carrots, peeled and sliced
1 red onion, thinly sliced
4 cloves garlic, minced
8 oz cremini mushrooms, quartered
1 tbsp herbes de Provence
1/4 cup cognac (brandy will also work.)
2 tbsp tomato paste
2 cups dry red wine
2 cups beef stock
1 tbsp butter, softened
4 cups cooked egg noodles
