Coconut Brownie Bites

Simple little heart-shaped (or any shape you have a mold for) brownies, topped with a coconut-topping that very much resembles the inside of an almond joy!

1 cups semisweet chocolate chips

1/2 stick butter

1/2 cup granulated sugar

1/4 cup brown sugar

2 eggs

1/2 teaspoon vanilla

1/2 cup all-purpose flour

1/4 teaspoon salt

For Coconut Topping
1/2 cup low fat sweetened condensed milk (I used Eagle Brand)

1/2 cup shredded coconut

1 teaspoon vanilla

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
