An incredibly flaky crust envelopes the delicious creamy coconut cream filling. Then it's topped off with fresh sweet whipped cream and toasted coconut! If you love coconut cream pie, you're going to love this one!

For the Flaky Crust:
1 cup unbleached or all-purpose flour
1/2 cup vegetable shortening (1/2 stick of Crisco)
1/2 teaspoon salt
1/4 cup water (icy)
For the Coconut Cream Pie Filling:
3 egg yolks
1/2 cups sugar
1/4 cup cornstarch
1/8 teaspoon salt
2 cups milk (very warm)
2 tablespoons butter
1 teaspoon vanilla extract
1/2 cup coconut
For the Sweet Whipped Cream:
1 cup heavy whipping cream
3 tablespoons confectioners sugar
1 teaspoon vanilla extract
For the Toasted Coconut:
1/2 cup coconut (toasted)
