These delicious rhubarb muffins have crunchy macadamia nuts and sweet coconut oil!

1 ¼ Cup Sugar
2/3 Cup Coconut Oil
1 Egg, Beaten
1 tsp Vanilla Extract
1 Cup Creamy, Full Fat Yogurt
1/3 Cup Milk
2 ½ Cups Flour (I used 1 Cup Whole Wheat and 1 ½ Cup All purpose Flour)
1 tsp Salt
1 tsp Baking Soda
½ tsp Ground Cinnamon
¼ tsp Freshly Grated Nutmeg
2 Cups Diced Rhubarb
