These delicious Coconut Pecan Bars have a gooey pecan filling with a buttery coconut shortbread crust! If you love pecan pie then you're going to love my Coconut Pecan Bars!

1 c. butter, softened
1/2 c. brown sugar
2 c. unbleached or all-purpose flour
1 c. coconut
6 T. butter
1/2 t. salt
1 c. brown sugar
1 c. light corn syrup
2 c. chopped pecans
3 large eggs, beaten
1 t. vanilla extract

Preheat oven to 350 degrees F. Combine the butter, brown sugar and flour in a food processor. Pulse until butter is small pea sized. Add the coconut and give the food processor another whirl. ...
