Coconut Pork Yakisoba

An asian inspired dish made with pork roast, yakisoba noodles, and a hint of shredded coconut

1 1/2 lb. bone-in pork roast, shredded
1 pkg. yakisoba noodles
1/3 cup shredded unsweetened coconut
1 cup fresh broccoli
1 cup sliced white mushrooms
1 cup shredded red cabbage
1 cup matchstick carrots
1/2 cup Kikkoman stir-fry sauce
1/3 cup Kikkoman teryaki sauce
Salt and pepper to taste
- Prepare roast pork in crock pot for 8 to 10 hours on low with 1/3 cup of teryaki sauce, and salt and pepper to taste - Use fork to shred pork from bone and set aside, be careful it may still be very hot - In a wok, cook broccoli, cabbage, mushrooms, and carrots with a splash of teryaki sauce until tender - In a separate pan, prepare yakisoba noodles according to package directions - Add the pork, stir-fry sauce and yakisoba to the wok - Stir in the coconut - Cook on low heat for about 10 minutes - Enjoy :)
