Crunchy and delicious...not to mention your house smells amazing as they bake!

1 cup pumpkin seeds, washed and dried
1 tablespoon coconut oil, melted
Kosher salt, to taste

1. Preheat the oven to 250 degrees F. After removing your seeds from the pumpkin, clean them well to remove all pulp.
2. Spread the seeds on a tray or towel to dry completely.
3. Melt your coconut oil (if it\\\'s not already) and toss with the seeds.
4. Spread the seeds on a foil lined baking pan in a single layer. Sprinkle liberally with Kosher salt.
5. Bake for 1-1.5 hours (depending on how crunchy you like them), stirring every 15 minutes.
