These gooey, sweet little squares are a perfectly rich and indulgent dessert for any occasion! They are simple to make with just a few basic ingredients you probably already have on hand. Waiting for them to cool is the hardest part!

6 Tablespoons unsalted butter, softened
1/4 cup granulated sugar
1/8 teaspoon salt
1 cup all purpose flour
2 eggs, slightly beaten
1 teaspoon vanilla extract
1 cup light brown sugar, packed and divided in fourths

1/4 teaspoon salt
1 cup flaked sweetened coconut
1/2 cup chopped walnuts
Preheat oven to 350°F. Line an 8x8 inch baking pan with foil, extending the foil over the edges of the pan. Spray the foil with non-stick spray. With an electric mixer, cream the butter, granulated sugar and 1/8 teaspoon salt until light and fluffy. Cut in 1 cup of flour with a pastry blender or a fork until mixture resembles very fine crumbs. Press this mixture firmly onto the bottom of the prepared pan. Bake for about 15 minutes until the edges are golden brown. While crust layer is baking, beat the eggs with the vanilla extract. Add brown sugar 1/4 cup at a time, beating well after each addition. Add remaining flour and salt, mix well. Stir in coconut and walnuts by hand till well combined. Spread this mixture over the baked crust layer immediately. Sprinkle with additional coconut and walnuts if desired. Bake for an additional 20-25 minutes until a toothpick inserted in the center comes out clean. Cool completely. Once cooled, use the over-hanging edges of the foil to remove from the pan. Cut into 1-inch squares. Store in an airtight container. Yields approximately 2 dozen 1-inch squares.
