Conquer the Day Granola

This granola is a simple, nutritious and hearty recipe that will give you the energy to conquer the day! It is full of heart healthy and fiber rich oats, sunflower seeds, pumpkin seeds, almonds and shredded coconut. It is also relatively low in sugar, as it is sweetened with 1/2 cup maple syrup. If you would like to make the recipe vegan you can substitute equal parts coconut oil for the butter. Enjoy!

4 cups rolled oats
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup slivered almonds
1 cup unsweetened shredded coconut
1 teaspoon cinnamon
1 teaspoon cardamom
1/2 teaspoon sea salt
2/3 cup raisins
zest of 1 orange
1/3 cup butter
1/2 cup maple syrup

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
