This Cookies & Ice Cream Cheesecake is the perfect summer dessert, because it's cool and doesn't require you to heat up your house by using the stove.

1 pkg chocolate chip cookies, divided
2 tbsp butter, melted
2 pkg (8 oz each) cream cheese, softened
1/2 cup sugar
2 tsp vanilla
1-1/2 qt French vanilla ice cream, slightly softened
