Cornbread

PREP: grease 8x8" Iron Skillet or muffin pan REHEAT: Oven 400 F BAKE: 25 min. MAKES: 12 Servings

1 Cup Yellow or White Cornmeal
1 Cup Flour
1 Tablespoon Baking Powder
1/4 Cup Sugar
1/4 Cup Honey
2 Eggs, beaten
1 Cup Milk, Buttermilk or Half and Half
1/4 Cup Cooking Oil or melted Butter
Pinch Salt
Mix first 4 ingredients, set aside. Whisk Eggs then Milk, Oil and Honey. Stir into dry ingredients just until moistened. Pour in pan and bake, cool. Opt: Sprinkle top with Sugar.
