Couscous Crusted Tilapia

Tilapia is such a mild and tender fish that you can count on even picky eaters liking it. It doesn't have a super strong fishy flavor that often turns off non-seafood lovers. I especially love the yummy couscous crust in the dish! Couscous is a really fun alternative to rice and it's so fast to whip together! Serve with some sauteed brussels sprouts or roasted asparagus and you've got a pretty nice meal!

1 (10 oz) box couscous
1/2 cup pine nuts
1/4 cup sun-dried tomatoes, finely chopped
1 Tbs ground cumin
Salt and pepper, to taste
1/4 cup olive oil plus 2 Tablespoons
1 Tbsp fresh lemon juice
1 lemon, thinly sliced
4 (8 oz) tilapia fillets
2 1/2 cups water
3 Tbsp parsley
