2-1/2 Lb Boneless Chuck Roast
1 Tablespoon Olive / vegetable Oil
2 medium onions quartered
3 garlic cloves minced.
14.5 ounce can diced tomatoes
1 cup brewed coffee
1/2 cup mole sauce (Mexican)
